Every other Sunday, my grandmother made gnocchi for the whole family. We would gather around the table for lunch, and her homemade gnocchi were always part of the occasion. They were never perfectly uniform: some were larger, some smaller, and many had wonderfully uneven shapes. But that was part of what made them special.

Those imperfect little potato balls are among my sweetest memories of her. Even now, whenever I make gnocchi, I think of her and find myself trying to recreate them the way she did: soft, comforting, and slightly irregular.

Gnocchi is one of those dishes that brings warmth to the table. It is simple, comforting, and surprisingly enjoyable to make from scratch, whether you are an experienced cook or trying it for the first time. In this post, we will look at the history of gnocchi, the ingredients you will need, and how to make your own homemade version step by step.

The History of Gnocchi

Gnocchi has a rich history that dates back to ancient times. The word "gnocchi" comes from the Italian word "nocca," which means knuckle. This name likely refers to the shape of the dumplings, which resemble small knuckles.

Originally, gnocchi was made with bread and flour, but over the years, potatoes became the main ingredient. This change made gnocchi softer and more flavorful. Today, there are many variations of gnocchi, including those made with spinach, ricotta, and even pumpkin.

Understanding the history of gnocchi adds depth to your cooking experience. It connects you to generations of Italian families who have enjoyed this dish for centuries.

Ingredients for Homemade Gnocchi

To make gnocchi, you will need a few simple ingredients. Here is a list of what you will need:

  • Potatoes: Use starchy potatoes like Russets or Yukon Golds. They create a light and fluffy texture.

  • Flour: All-purpose flour works best. You may need more or less depending on the moisture of your potatoes.

  • Eggs: One large egg helps bind the ingredients together.

  • Salt: A pinch of salt enhances the flavor of the gnocchi.

Optional

  • Nutmeg: A dash of nutmeg adds a warm flavor.

Step-by-Step Instructions to Make Gnocchi

Now that you have your ingredients, let’s dive into the process of making gnocchi. Follow these steps for a successful outcome.

Step 1: Cook the Potatoes

Start by boiling the potatoes.

  1. Wash the potatoes thoroughly and place them in a large pot.

  2. Cover them with cold water and add a pinch of salt.

  3. Bring the water to a boil and cook the potatoes until they are tender, about 20-30 minutes.

Once cooked, drain the potatoes and let them cool slightly.

Step 2: Prepare the Dough

  1. Peel the potatoes while they are still warm.

  2. Pass the peeled potatoes through a potato ricer or mash them until smooth.

This step is crucial for achieving the right texture.

  1. Spread the mashed potatoes on a clean surface and let them cool completely.

  2. Once cooled, create a well in the center of the potatoes.

  3. Add the flour, egg, and salt into the well.

  4. Gently mix the ingredients together until a dough forms.

Be careful not to overwork the dough, as this can make the gnocchi tough.

Step 3: Shape the Gnocchi

  1. Divide the dough into smaller portions.

  2. Roll each portion into a long rope, about 1/2 inch thick.

  3. Cut the rope into small pieces, about 1 inch long.

  4. This shape is called "pillow" and it's the one my Grandma used to make every other Sunday.

  5. If you want to shape the gnocchi differently, you can use a fork: press each piece gently against the tines of the fork to create ridges.

Step 4: Cook the Gnocchi

  1. Bring a large pot of salted water to a boil.

  2. Carefully drop the gnocchi into the boiling water.

  3. Cook them until they float to the surface, about 2-3 minutes.

  4. Use a slotted spoon to remove the gnocchi and transfer them to a plate.

Step 5: Serve with Your Favorite Sauce

Gnocchi can be served with a variety of sauces. Here are a few popular options:

  • Tomato Sauce with Fresh Basil: A classic sauce that pairs perfectly with gnocchi.

  • Brown Butter Sage Sauce: Melt butter in a pan, add fresh sage leaves, and cook until the butter is golden brown.

  • Pesto: A fresh basil pesto adds a burst of flavor.

Top your gnocchi with grated Parmesan cheese for an extra touch.

Tips for Perfect Gnocchi

Making gnocchi can be a bit tricky, but with these tips, you can achieve perfect results every time.

  • Use the Right Potatoes: Starchy potatoes are key to light and fluffy gnocchi. Avoid waxy potatoes, as they can make the dough too dense.

  • Don’t Overwork the Dough: Mix the ingredients just until combined. Overworking can lead to tough gnocchi.

  • Test a Few First: Before cooking all the gnocchi, test a few in boiling water. This way, you can adjust the dough if needed.

  • Keep Them Floured: If you are not cooking the gnocchi immediately, dust them with flour to prevent sticking.

Gnocchi Variations to Try

Once you master the basic gnocchi recipe, you can experiment with different flavors and ingredients. Here are some variations to consider:

  • Spinach Gnocchi: Add cooked and chopped spinach to the dough for a vibrant green color and added nutrients.

  • Ricotta Gnocchi: Substitute some of the potatoes with ricotta cheese for a creamy texture.

  • Pumpkin Gnocchi: Use pureed pumpkin instead of potatoes for a seasonal twist.
